Cabbage rolls: the complete and healthy dish!

Not the usual cabbage rolls recipe! You'll fall in love with this version! π
INGREDIENTS

1 medium cabbage
1 onion, chopped
1 garlic clove, minced
3 potatoes, diced
125ml (1/2 cup) water
150g (1 cup) cheese, shredded
40g (1/3 cup) parmesan, grated
15ml (1 tbsp) olive oil
salt and pepper to taste
15ml (1 tbsp) olive oil (for frying)
METHOD
- Place 10 cabbage leaves into a pot with boiling water. Boil for 20-30 seconds. When leaves become soft, take them out using tongs, let drain.
- Chop remaining cabbage.
- Heat oil in a frying pan, add garlic and onion, and cook for 2 minutes or until fragrant.
- Add diced potatoes and chopped cabbage, season with salt and pepper, and give a good stir.
- Pour in water, close with a lid and cook until vegetables soften.
- Place one cabbage leaf on a cutting board, add in 2 tablespoons of softened vegetables, and top with some shredded cheese.
- Fold the right side of the leaf over the filling and then fold the left side over. Begin to roll the cabbage leaf up, starting at the base. Repeat with the remaining filling and cabbage leaves.
- Arrange rolls into a greased baking dish and sprinkle with some more shredded cheese and grated parmesan on top.
- Sprinkle with olive oil and bake in the preheated to 200Β°C/400Β°F oven for 25 minutes.
- Serve and enjoy!
