Mini brioche: the recipe to make your tasty break

Ingredients:
Dough:
50 gr butter
40 gr sugar
5 gr salt
350 gr wheat flour
250 ml whole milk
20 gr fresh brewer's yeast
1 egg
Filling:
200 ml of water
80 gr sugar
Vanilla essence
30 gr wheat flour
1 pinch of food coloring
Directions:
Dough: mix the butter with sugar and salt. Then dissolve the yeast in the milk and add to the rest. Stir and add flour and egg. Form a homogeneous dough and let it rise until doubled in volume.
Then divide the dough into 15 mini brioches and let them rest for 30 minutes. Brush an egg yolk and bake at 356°F (180°) for 12 minutes.
Filling: in a saucepan pour the water and add the sugar, vanilla essence, flour and coloring. Stir until it thickens and then stuff the mini brioches. You can of course stuff them in any way.
