Small brioches: for a really tasty snack!

Fluffy and delicious, this recipe is a must-try!
INGREDIENTS
125ml (1/2 cup) milk
125ml (1/2 cup) kefir
7g (2 1/4 tsp) instant yeast
30g (2 tbsp) sugar
1 egg
1 egg white
80g (1/3 cup) butter, melted
3g (1/2 tsp) salt
2g (1/2 tsp) baking soda
500g (3 cups + 2 tbsp) flour
1 egg yolk
strawberry jam
METHOD
- Add yeast into warm milk and stir well.
- To a large bowl add sifted flour, sugar, a pinch of salt, and soda, stir to combine.
- To the same bowl add kefir, egg, egg white, and yeast mixture.
- Start to mix the dough with a spatula. Then continue to knead it with your hands, add butter and knead until you receive an elastic dough.
- Form a ball from the dough and cover the bowl with a kitchen cloth or plastic wrap. Allow the dough to rise in a fridge min. 4 hours or overnight.
- Transfer the dough to the working surface, and divide it into 12 parts.
- Roll each part into a ball, cover with a kitchen cloth, and let sit for 15 minutes.
- Flatten each ball a bit and roll it into an oval shape with a rolling pin.
- Cut half of the oval into strips with a pastry or pizza cutter.
- Add a spoon of strawberry jam onto the non-cut part of the oval and close the edges right where the strips begin.
- Then, roll the brioche. Continue with the rest of the dough.
- Arrange brioches on a baking tray, cover with a kitchen cloth and allow to rise for 20 minutes.
- Brush brioches with egg yolk and bake at 180C/360F for 30 minutes.
- Decorate with powdered sugar and enjoy!
