Eggplant mini tarts: the recipe for a quick and tasty meal

Ingredients:
1 eggplant
120 g of tomato sauce
1 mozzarella cheese
100 g of cherry tomatoes
Olive oil
Salt and pepper
Garlic powder
Dried thyme
Directions:
1. Slice the eggplant.
2. Brush with a mixture of olive oil, salt and pepper.
3. Bake at 180° for 20-25 minutes.
4. Season tomato sauce with olive oil, salt and garlic powder.
5. Then spread this mixture on top of eggplant slices.
6. Now add diced mozzarella cheese and cherry tomatoes.
7. Sprinkle with thyme.
8. Bake again for 15 minutes.
