Cherries log: the recipe for a beautiful dessert perfect for any occasion

Ingredients:
- For the batter:
60 g of flour
20 g of cocoa powder
3 eggs
1 pinch of salt
70 g of sugar
10 g of vanilla sugar
- For the filling:
350 g of ricotta cheese
100 g of soft butter
50 g of powdered sugar
10 g of vanilla sugar
150 g of cherries in syrup
- For decoration:
80 g of dark chocolate
80 g of butter
50 g of filling
Chocolate flakes
Candied cherries
Directions:
1. Whisk eggs with salt, sugar and vanilla sugar.
2. Sift and stir in cocoa powder.
3. Pour the batter into a tray coated with baking paper and flatten using a spatula.
4. Bake in a pre-heated oven at 190° for about 10 minutes.
5. For the filling: mix butter, ricotta cheese, sugar and vanilla sugar in a bowl and stir to blend all of the ingredients into a smooth cream.
6. Refine the cake using a knife and brush it with cherries' syrup.
7. Spread the filling you made before all over the cake and add drained cherries. Then close and shape the log.
8. Refrigerate for 3-4 hours.
9. Aside, whip butter and stir in melted chocolate. Then add 50 g of the filling you made before.
10. Use this mixture to coat the log's surface.
11. Lastly decorate with chocolate flakes and candied cherries.
