Eggplants en papillote: the savory recipe you really need to try

Ingredients:
2 large potatoes (400-450 g)
Olive oil
Salt and pepper
Sweet paprika
Garlic powder
1 eggplant (300-350 g)
1 medium-sized onion
2 red bell pepper
200 g of tomato sauce
150 ml of water
Fresh parsley
Directions:
1. Peel and dice potatoes. Then season with olive oil, salt, garlic powder, pepper and paprika.
2. Bake at 180° for 35-40 minutes.
3. Slice the eggplant. Then mix olive oil, salt, pepper, paprika and garlic powder and use to season.
4. Bake at 180° for 25 minutes.
5. Stir fry finely chop onion in a pan with some olive oil. Then add diced red bell pepper, tomato sauce and water.
6. Season with salt, black pepper and sweet paprika.
7. Cook at medium heat for about 10 minutes. In the end, add chopped fresh parsley.
8. Shape the baking paper into a container as shown in the video.
9. Fill with baked potatoes, a slice of eggplant and the vegetables from the pan.
10. Cover with shredded mozzarella cheese and chopped parsley.
11. Bake at 180° for 15 minutes.
