Eggplant omelette: when you feel like cooking something easy and good!

A quick and delicious recipe to try!

INGREDIENTS
400g (4.8 cups) Blue eggplant
2g (1/4 tsp) salt
1g (1/2 tsp) chili powder
1g (1/2 tsp) black pepper
1g (1 tsp) Tomato powder
2 eggs
Oil for coating pan
 
METHOD
  1. Cut the eggplant into slices. Sprinkle the eggplant with the spices, stir, and then arrange on a pan previously coated with oil. Whisk the eggs and sprinkle over the eggplant.
  2. Bake until the omelette is baked on both sides.
