Chocolate eggplant parmesan: a special dessert to try!

Pour the chocolate over the eggplant slice. The result is mouth-watering!
INGREDIENTS
INGREDIENTS
1kg (2 pounds) eggplants;
100g (3.5 oz) cocoa powder;
50g (1.7 oz) flour;
100g (3.5 oz) almond flakes;
2 cups water;
200g (7 oz) dark chocolate;
500g (1 pound) sugar;
2 tsp salt.
METHOD
- Slice eggplants using a very sharp knife or mandolin. Season eggplant slices with salt generously and set aside for around an hour. Wash and pat them dry afterward.
- Boil water with sugar until all crystals dissolve. Add flour and cocoa and whisk to make sure that there are no lumps left. Remove from heat, add dark chocolate and continue whisking until all the chocolate has melted.
- Fry eggplant slices with olive oil until golden on both sides.
- Layer eggplant slices in a baking dish to cover the bottom of it. Top with chocolate sauce and almond flakes. Repeat until you run out of ingredients.
- Bake at 100C/215F for 15 minutes.
