Eggplant fritters: the easy and tasty recipe to try

Ingredients:
2 medium-sized eggplants
Salt and pepper
1 potato
2 medium-sized eggs
1 red onion
Fresh parsley
80 g of flour
Sunflower seeds oil
Mozzarella cheese
1 large tomato
Dried oregano
Sweet paprika
Directions:
1. Wash and grate the eggplants.
2. Add salt and let rest fro 10-15 minutes. After that squeeze them.
3. Grate potatoes too and squeeze.
4. Mix potatoes and eggplants. Then add chopped onion and parsley, salt, pepper, eggs and flour.
5. Stir well to combine all the ingredients.
6. Shape the fritters and fry them in a pan with hot seeds oil.
7. Cover them with shredded mozzarella cheese and a tomato slice.
8. Season with salt, oregano and paprika.
9. Put a lid on and cook at low heat for 3-4 minutes.
