Eggplant in a pan: the savory side dish ready in just a few minutes

Ingredients:
2 eggplants
3 bell peppers (green, yellow, red)
Salt
Sunflower seeds oil (for frying)
2 fresh tomatoes
200 g of tomato sauce
Olive oil
1 garlic clove
150 ml of water
Salt and pepper
Parsley
Sweet paprika
5 g of coriander
5 g of cumin
Directions:
1. Cut the eggplants and season them with salt.
2. Let rest for 20 minutes, then rinse them and fry them.
3. Cut and fry the peppers too.
4. In a pan make sauce and add all the spices you like.
5. Then add vegetables and cook for 8/9 minutes.
