TOMATO IN A PAN: a quick and tasty side dish!

INGREDIENTS
5–6 ripe tomatoes
1 clove of garlic
Extra virgin olive oil
Salt
Oregano
Parsley
Mint
Basil
Black pepper
METHOD
1. Wash the tomatoes and cut them in half.
2. Heat a pan with a drizzle of olive oil and place the tomatoes cut side down.
3. Sprinkle chopped parsley, chopped mint, oregano, and 2 cloves of garlic cut into visible pieces directly into the pan.
4. Cook for a few minutes, then add a little more olive oil. Cover with a lid and let cook for about 15 minutes, turning them occasionally.
5. The tomatoes will be ready when they are soft and have released their juices.
6. Once removed from the pan, garnish with fresh basil leaves and serve on a slice of toasted bread.
