Baked potato croquettes: the tasty way to make them without frying

Ingredients:
750/800 g of potatoes
30 g of grated Parmesan
20 g corn starch
1 egg
Salt and Pepper To Taste
nutmeg to taste
1 egg
flour to taste
breadcrumbs to taste
a drizzle of extra virgin olive oil
Directions:
1. First, cut the potatoes and boil them in salted water.
2. Mash the potatoes and add parmesan, starch, egg, salt, pepper and nutmeg.
3. Shape the croquettes and roll them in the flour, egg and breadcrumbs.
4. Arrange them on the tray and add some oil.
5. Bake at 180° for 20-25 minutes.
