Chicken croquettes: for a super tasty aperitif!

INGREDIENTS
Olive oil
1 onion
3 cloves of garlic
1 red chili
1 green chili
30g (1/4 cup) of flour
120ml (1/2 cup) of chicken stock
520g of chicken breast (cooked)
Nutmeg
Salt
Pepper
420g of potatoes (boiled)
50g of cheese
2 egg yolks
Parsley
25g of butter
20ml (1 1/2 tbsp) of lemon juice
50g (1/2 cup) of parmesan
2 egg whites
Breadcrumbs
Oil for frying
METHOD
1. In a pan pour a drizzle of olive oil and fry the onion until translucent. Add the garlic, red chili, green chili, flour, and chicken stock and mix to make it smooth. Add the shredded chicken season with nutmeg, salt, and pepper, and cook for a few minutes until well mixed together. Remove from the heat.
2. In a bowl mash the potatoes and add the cheese, egg yolks, parsley, butter, lemon juice, parmesan, and prepared chicken and mix all well together.
3. Oil the hands and with the help of the spoon take the mixture and form the croquettes. Arrange them on the baking dish and transfer them to the freezer for 30 minutes.
4. After 30 minutes coat the croquettes with flour and then pass first in the egg whites and then in breadcrumbs.
5. Add the croquettes to the pot with the hot oil and fry until they are golden brown.
6. Serve them all together on a serving dish. Decorate some of them with some sauce on top.
