Cheese and pears croquettes: an extra tasty idea for your dinner!

INGREDIENTS (For about 20 croquettes)
For the béchamel:
65g of flour
500g of milk
50g of butter
1 onion
70g of gorgonzola cheese
Salt to taste
Pepe to taste

For the filling
200g of gorgonzola cheese
2 pears
15g of sugar
40g of white vinegar
200g of gorgonzola cheese

For breading
1 egg
Breadcrumbs to taste
1 egg
Breadcrumbs to taste
Seed oil for frying to taste
METHOD
1. Start by preparing a flavored béchamel sauce, sauté in the butter of the chopped onion, then put the flour, toast and pour the milk, add salt and pepper and bring to a boil, stirring, when ready, add some gorgonzola and put it in a pan, Cover with plastic wrap and let it cool completely.
2. While peeling and chopping pears into cubes and put them in a pan with a little oil, sugar and vinegar.
3. Cook for a few minutes and then let them cool
4. When the sauce is cold, with a pinch of flour divide it into strands, then pieces.
5. Fill each croquette with a piece of gorgonzola and pears.
6. Close well and Passale first in beaten egg and then in breadcrumbs.
7. Fry in hot seed oil for about 3 minutes, or until golden brown, drain on absorbent paper and then serve hot.
Note: to help you form croquettes you can grease your hands with seed oil, so composing and closing them will be much easier
