Ham croquettes

Ingredients
200 g of SERRANO HAM
1 ONION
100 g of FLOUR
100 g of BUTTER
1 liter MILK
CHOPPED PARSLEY
SALT TO TASTE
For frying
FLOUR
3 beaten EGGS
BREAD CRUMBS
OLIVE OIL

METHOD
Cut the butter into cubes and put it to melt in a casserole dish. Add the onion and salt and sauté for 5-6 minutes, then add the chopped ham and continue stirring.
Add the flour and after a few minutes pour in the milk, stirring constantly. Cook the bechamel for 20 minutes. Sprinkle with chopped parsley.
Pour the bechamel mixture over a platter, cover with plastic wrap and let it cool.
When the dough is cold, cut and shape the croquettes.
Dip them in egg, flour and bread crumbs and fry in hot oil.
When done, remove them from the pan and put them to drain the excess oil on a plate covered with paper towels.
Enjoy.
