Spanish Ham Croquettes: the recipe for a tasty appetizer!

So creamy inside and crispy outside, the result is delicious!
INGREDIENTS

1l (4 cups) milk;
250 ml (1 cup) chicken stock;
1 onion, chopped finely;
80 g (⅓ cup) butter;
200 g (1 ½ cup) ham, cut into cubes;
120 g (⅔ cup) all-purpose flour;

3 eggs;
salt and pepper to taste;
60ml (¼ cup) milk;
Breadcrumbs;

METHOD
- Melt butter and saute onions until slightly golden. Add ham. Add in flour and cook it for a minute.
- Start pouring in stock gradually, then whisk in milk, making sure to remove any lumps.
- Cook for 10-15 minutes, until it gets very thick, then transfer into the fridge to cool down completely.
- Take a spoonful of cream, dust in flour, dip in eggs and milk, then cover with breadcrumbs.
- Fry in preheated oil until golden and crispy.
