Pineapple butt chicken: super tasty and easy!

How to cook a whole chicken in a delicious way!
INGREDIENTS

• 1 large pineapple
• 1 whole chicken
• 60ml soy sauce
• 75g cane sugar
• 80ml pineapple juice
• 1 tbsp ginger, finely chopped
• 1 tsp garlic, finely chopped
For Avocado Salad:
• 100g diced red onion
• 1 chili pepper, cut into thin slices
• 1 diced avocado
• Lime juice
METHOD
1.) Start with marinade. Heat the soy sauce in a pan with brown sugar, pineapple juice, minced garlic and ginger. Cook on low for 5 minutes, until the marinade is thickened.

2.) Cut the pineapple so that it has the form of a small column with a base, remove the top with the leaves and the side pieces of the pineapple.
3.) Place the chicken on the pineapple, then brush with the marinade, previously prepared.
4.) Put the pineapple top back on the chicken and secure it with a wooden skewer. Cook the chicken in the oven at 220°C/430°F for 15 minutes. Then grease it with marinade, reduce the temperature in the oven to 190°C/380°F and cook for another 45 minutes.
5.) Use the remaining of the pineapple flesh for the salad. Cut it into cubes and place in a bowl. Add chopped red onion, chili pepper, avocado and half lime juice. Mix everything together.
