Pineapple chicken breasts: juicy, cheesy and tender!

A tropical cheesy experience to try!

INGREDIENTS
• 3/4 tsp Italian seasoning
• 1/2 tsp sweet paprika
• 1/4 tsp garlic powder
• 4 chicken breasts
• salt
• Freshly ground black pepper
• 2 tbsp Olive oil
• 1 1/2 cups grated mozzarella
• 2 tbsp fresh grated Parmesan
• 4 thin pineapple rings
 
METHOD
  1. In a small bowl, mix Italian seasoning, sweet paprika and garlic powder. Season the chicken with salt and pepper.
  2. Heat oil in a large skillet over medium heat. Cook the chicken on the cook until golden brown, about 5 minutes. Remove from heat and sprinkle with seasoning mixture.
  3. Sprinkle the top of the chicken with 1 cup of mozzarella and half the parmesan. Put a pineapple ring on top of each chicken slice. Sprinkle the remaining 1/2 cup of mozzarella and the remaining Parmesan.
  4. Bake for 10 minutes at 375°F/190°C.
