Potato boats: how to make them succulent and racy!

INGREDIENTS
6 potatoes
1 chicken breast
100g Parisian carrots
80g peas
100g shredded mozzarella cheese
1 tsp salt
1/2 tsp black pepper
1/2 tsp red pepper
2 tbsp olive oil 
 
METHOD
  1. Cut potatoes to make boat form, fry in hot oil for a few minutes until golden.
  2. In the pan fry chicken pieces with salt, pepper and red pepper, add in pears and carrot, fry for about 5 minutes more.
  3. Fill potato boats with prepared chicken and sprinkle with shredded cheese.
  4. Bake at 180°C (360°F) for 20 minutes.
