Potato egg boats: a delicious recipe for a special dinner!

INGREDIENTS

Makes 6 servings:

6 medium/large potatoes

6 egg yolks.

100 g mozzarella, grated

2 tbsp olive oil

Salt and freshly ground black pepper

Bacon 12-14 strips

METHOD

Preheat oven to 170°C (340°F).
On a baking tray pour some olive oil onto the potatoes, sprinkle with salt and pepper, bake for 50 minutes.
Cut off the tops of potatoes, remove the stuffing of potatoes and mix it with cheese and species.
Wrap potato boats with bacon, fill with cheese filling and top with egg yolk. Bake for 15 minutes more.
