Cheesy Bacon and Potato Omelet with tortillas inside: the best recipe for a special dinner!

A wonderful egg recipe. Potatoes are cooked, then sliced and pan-fried with cooked bacon and eggs, to create this delicious omelette. Serve for breakfast, brunch, lunch or dinner.
INGREDIENTS

Olive oil
2 cups diced potatoes
6 eggs
18 strips of bacon
6 slices of cheddar cheese
3 tortillas
Chopped fresh parsley
Bacon bits
METHOD
- Fry potatoes until golden brown, divide in half and put 1 half into a bowl.
- In a medium bowl, beat eggs.
- Put bacon on a baking sheet and bake 190°C/375°F for 10 minutes
- Pour half of the eggs into the pan, put the tortilla, 6 slices of bacon and 2 slices of cheese, repeat 2 more times.
- Press with your hand, add the remaining fried potatoes to the bowl with eggs, mix and pour into the pan
- Cover and cook for 15 minutes.
- Flip and fry for another 5 minutes
- Sprinkle with chopped bacon and parsley
