Stuffed potatoes: ready in 15 minutes!

A creamy and rich versione that everyone will love!

INGREDIENTS
 4 large potatoes; 
2 eggs;
 1 cup ham, sliced;
 ¼ cup white onion, diced;
 ¼ cup fresh basil, sliced;
 2/3 cup cheese, shredded; 
salt and pepper.
 
METHOD
  1. Preheat oven to 190C/375F. Bake potatoes for 1 hour or until cooked through, then remove from the oven and leave until comfortable to handle.
  2.  Cut top ¼ and carefully remove the pulp using teaspoon. Make a potato boat without poking it though.
  3.  Use half of the potato pulp to make the filling. Mash potato with a fork and add eggs, ham and basil. Season with salt and pepper to taste.
  4.  Fill each potato boat with the filling and top with cheese. Bake for 10-12 minutes more until golden and melty.
