Rose cream pie: the delicious recipe to make for Mother's Day

Ingredients:
- For the apple stuffing:
3 small apples (2 big ones)
1 tbsp of sugar
2 tbsp of lemon juice
Cinnamon
1 tbsp of apricot jam
- For the cream:
2 egg yolks
2 tbsp of sugar
2 tbsp of corn starch
300 g of warm milk
Lemon zest
Vanilla
- For the shortcrust pastry:
2 egg yolks
60 g of oil
100 g of sugar
1 tsp of baking powder
Grated lemon zest (optional)
300 g of cake flour
- For decoration:
2 apples
Brown sugar
Powdered sugar
Directions:
1. Peel and dice the apples.
2. Place them in a pan with lemon juice, brown sugar and cinnamon.
3. Cook the apples stirring from time to time until they get soft.
4. Turn off the stove and add jam. Then let cool.
5. For the cream: whisk eggs and sugar in a saucepan.
6. Add sifted corn starch, milk, lemon zest and vanilla.
7. Bring to a boil and blend until it thickens. Let cool.
8. For the shortcrust pastry: mix eggs, sugar, lemon zest and seeds oil.
9. Lastly add flour and baking powder.
10. Knead until you get a smooth and even dough.
11. Divide it into two pieces and spread the bigger one.
12. Place the dough onto an oiled and floured mold and make some holes on the bottom using a fork.
13. Fill with apples and cream you made before.
14. With dough scraps make some stripes to place on top of the pie.
15. Cut 2 apples in very thin slices, then shape the roses and decorate.
16. Sprinkle with brown sugar.
17. Bake at 170° for 35/40 minutes.
18. Decorate with powered sugar and serve.
