Apple and custard pie: how to prepare this amazing dessert

Ingredients:
Shortcrust pastry
500 grams of flour 00
200 grams of granulated sugar
a pinch of salt
220 gr of butter
1 sachet (8 g) of vanilla sugar
2 eggs (100 g)
Custard cream
4 egg yolks (80 g)
120 grams of granulated sugar
25 grams of flour 00
25 gr of corn starch
500 ml of fresh whole milk
1 organic lemon zest
4 apples
Directions:
1. Shortcrust pastry: mix the flour with sugar, salt and toss. Then add the vanilla sugar and the eggs. Form a homogeneous dough and leave it in the fridge for 2 hours. Then roll out the pastry and bake it with the dried legumes at 220 ° for 20-25 minutes.
2. Cream: mix the egg yolks with sugar, flour, starch and a little milk. Heat the remaining amount of milk with the lemon zest. Then add the two compounds and let them thicken.
3. Assemble the cake by adding the apples and bake at 180 degrees for 40 minutes.
