Sicilian cannoli: the baked version to enjoy this tasty recipe

Ingredients:
180g "00" flour
60g sugar
30g butter
1 egg white
40g apple cider vinegar
1g salt
STUFFED:
500g ricotta
125g powdered sugar
1 pinch of salt
25g pistachio paste
DECORATION:
Chopped pistachio
Chocolate chips

Directions:
1. Dough: divide the yolks from the whites. Mix the flour with sugar and salt. Then add apple cider vinegar, melted butter and an egg white.
Mix well and form a homogeneous dough, let it rest for 1 hour in the fridge.
2. Filling: mix the ricotta with the sugar and icing, then divide into two bowls and add the pistachio cream in one of the two.
3. Form the cannoli and bake them at 356°F (180°) for 23 minutes.
4. Let them cool and stuff them.
