Pancakes cannoli: a delicious treat to try now!

Easy and delicious, the whole family will love this treat!
INGREDIENTS
For the pancakes:
3 egg yolks
3 egg whites
30 ml (2 tbsp) milk
30 ml (2 tbsp) vegetable oil
10 g (1 1/2 tbsp) sugar (for egg yolks)
60 g (1/4 cup) sugar (for egg whites)
40 g (1/3 cup) flour
For the filling:
250 ml (1 cup) whipping cream
25g (2 tbsp) sugar
6 strawberries, cut into quarters
For decoration:
Powdered sugar
Melted milk chocolate
METHOD
- In a mixing bowl combine milk, vegetable oil, sugar and stir to emulsify.
Add egg yolks and mix well. - Sift flour into the same bowl and whisk until smooth.
- In another bowl whip egg whites until soft peaks form, gradually add 60 g of sugar and continue to whip until stiff peaks form.
- Transfer egg whites into the bowl with egg yolks and fold till incorporated.
Preheat the oven to 180C/360F. Line a baking tray with parchment paper or a baking mat. - Add batter to the piping bag, pipe 6 pancakes onto a baking tray and bake for 10-15 minutes. Let cool.
- In a bowl, whip cream with sugar and transfer the mixture into a piping bag.
- Stuff each pancake cannoli with a layer of whipped cream, add 2-3 strawberry quarters and pipe another layer of cream.
- Top each cannoli with 2 more strawberry quarters.
- Decorate with some powdered sugar and molted milk chocolate.
