Cannoli waffle

Ingredients:
2/3 cup flour;
a pinch of salt;
½ cup sugar;
2 eggs;
1 tbsp melted butter;
¼ cup milk;
150 g (5 oz) ricotta;
120 g (4 oz) mascarpone;
¼ cup brown sugar;
melted white chocolate, crispy bacon for serving.

Instructions
In one bowl whisk flour, salt and sugar. Use another bowl to combine eggs, butter and milk. Mix wet and dry ingredients until smooth batter forms.
Fry waffles for 3-4 minutes or until golden. Use spatula to roll hot waffles into cannoli. Leave to cool down.
Make cream whisking ricotta, mascarpone and brown sugar together.
Fill each cannoli with cream, dip into melted chocolate and cover with crispy bacon.
