Paradise sponge cannoli: a sweet treat to die for!

Super creamy and ready in a few minutes, here's a treat you need to try now! 
 
INGREDIENTS
 4 eggs, separated;
 100 g (½ cup+2 tbsp) ‘00’ flour;
 100 g (½ cup) sugar;
 4 g (1 tsp) baking powder;
 240 ml (1 cup) whipping cream;
 30 ml (2 tbsp) water.
 
METHOD
  1.  Beat egg yolks with sugar until pale. Add baking powder, flour and some water. Mix to make the dough.
  2.  Separately beat egg whites until stiff and carefully fold them into the batter, trying to save as much air as possible.
  3.  Spread portions of the batter on a parchment-covered baking sheet, bake for 10 minutes at 180C/350F.
  4.  Fold each pancake in half and secure it with a plastic wrap as shown on the video.
  5.  Whip cream until stiff peaks form. Add cream into each cannoli and serve, dusted with powdered sugar.
