Paradise sponge cannoli: a sweet treat to die for!

Super creamy and ready in a few minutes, here's a treat you need to try now!
INGREDIENTS
4 eggs, separated;
100 g (½ cup+2 tbsp) ‘00’ flour;
100 g (½ cup) sugar;
4 g (1 tsp) baking powder;
240 ml (1 cup) whipping cream;
30 ml (2 tbsp) water.
METHOD
- Beat egg yolks with sugar until pale. Add baking powder, flour and some water. Mix to make the dough.
- Separately beat egg whites until stiff and carefully fold them into the batter, trying to save as much air as possible.
- Spread portions of the batter on a parchment-covered baking sheet, bake for 10 minutes at 180C/350F.
- Fold each pancake in half and secure it with a plastic wrap as shown on the video.
- Whip cream until stiff peaks form. Add cream into each cannoli and serve, dusted with powdered sugar.
