published on 9 January, 2023 at 18:05
INGREDIENTS
160ml (3/4 cup) of milk
60ml (1/4 cup) of heavy cream
30g (1/4 cup) of sugar
4g of dry yeast
300g (2 1/2 cups) of all-purpose flour
3g (1/2 tsp) of salt
30g (1/4 cup) of butter
25g (1/4 cup) of milk powder
10g (1 1/2 tbsp) of powdered sugar
METHOD
1. In a bowl add the milk, heavy cream, sugar, and yeast and mix until sugar and yeast dissolve.
2. Add the flour and salt and continue mixing. When the dough starts to form knead with your hands. Add the butter and continue kneading until the dough is smooth. Cover with cling film and let it rise for 1 hour or until doubles in volume.
3. After time has elapsed transfer the dough to the working surface and split it into 6 equal pieces. Split each piece on 6 more to obtain the 36 balls in total (for about 16g each).
4. Transfer the balls to the baking mold (28x28cm mold size), cover them with cling film, and let them rise for 1 hour, or until double in volume.
5. Meanwhile prepare mix the milk powder and powdered sugar to prepare it for sprinkling.
6. After the balls are doubled sprinkle the powder mixture on top. Transfer to the oven and bake at 150°C/300°F for 25 minutes.
7. After baking sprinkle the pearls one more time with the powders mixture and serve.
