Fluffy pan bao: how to make it soft like a cloud!

Here's the secret to make a fluffy sweet bread!
INGREDIENTS
1 egg;
1 tsp salt;
50 g (4 tbsp) sugar;
100 ml (½ cup+1 tbsp) warm milk;
100 ml (½ cup+1 tbsp) warm water;
30 g (2 tbsp) butter, melted;
7 g (2 tbsp) dry yeast;
420 g (3 cups) all-purpose flour;
30 g (2 tbsp) butter, soft;
1 egg yolk;
120 ml (½ cup) milk.
METHOD
- Whisk egg with sugar, salt, milk, butter and water. Add the dry yeast and whisk again.
- Combine wet ingredients with flour and knead the dough for 10 minutes.
- Roll the dough into a ball and set aside for 30 minutes in an oiled bowl.
- Knead softened butter into the dough, roll into a ball and set aside for 30 minutes more.
- Cut the dough into 6 pieces and roll each as shown on the video.
- Place in a buttered baking pan and set aside for 1 hour.
- Whisk egg yolk with milk and pour the mixture on top of the buns.
- Bake at 200C/400F for 20 minutes.
