Fluffy pan bao: how to make it soft like a cloud!

Here's the secret to make a fluffy sweet bread! 
 
INGREDIENTS
 1 egg;
 1 tsp salt;
 50 g (4 tbsp) sugar;
 100 ml (½ cup+1 tbsp) warm milk;
 100 ml (½ cup+1 tbsp) warm water;
 30 g (2 tbsp) butter, melted;
 7 g (2 tbsp) dry yeast;
 420 g (3 cups) all-purpose flour;
 30 g (2 tbsp) butter, soft;
 1 egg yolk;
 120 ml (½ cup) milk.
 
METHOD
  1.  Whisk egg with sugar, salt, milk, butter and water. Add the dry yeast and whisk again.
  2.  Combine wet ingredients with flour and knead the dough for 10 minutes.
  3.  Roll the dough into a ball and set aside for 30 minutes in an oiled bowl.
  4.  Knead softened butter into the dough, roll into a ball and set aside for 30 minutes more.
  5.  Cut the dough into 6 pieces and roll each as shown on the video.
  6.  Place in a buttered baking pan and set aside for 1 hour.
  7.  Whisk egg yolk with milk and pour the mixture on top of the buns.
  8.  Bake at 200C/400F for 20 minutes.
