Cloud egg cake: how to make it high and frothy in a pan!

Ready with just eggs, this cake is so ligh and fluffy!
INGREDIENTS
3 eggs
10g (1 1/2 tbsp) of powdered sugar
1 lemon (zest)
10g (1 1/2 tbsp) of powdered sugar
1 lemon (zest)
butter
Powdered sugar for decoration
Powdered sugar for decoration
METHOD
- Separate egg yolks and egg whites. Beat the egg yolks and cook them in a pan (24cm pan size) on butter.
- Whip the egg whites with the powdered sugar until stiff and pour over the omelette. Level and give the shape of the pan, cover with the lid and cook over low heat for 10 minutes.
- Remove from the heat, while it is still hot, cut in half, and fold one half over the other. Divide into three slices and sprinkle with powdered sugar.
