Crown shaped brioche: how to make it high and fluffy!

The result will leave you speechless! 
 
INGREDIENTS
 550g (4 ⅜ cup) bread flour;
 7g (1 1/2 tsp) dry yeast;
 30g (2 tbsp) sugar;
 310ml (1 ⅓ cup) milk;
 100g (½ cup) condensed milk;
 1 egg;
 70g (⅓ cup) butter, soft;
 Egg wash.
 
METHOD
  1.  Whisk flour with a pinch of salt and make a well in the center.
  2.  Pour warm milk into it, add sugar, yeast, condensed milk and an egg. Knead the dough for 10 minutes, then add soft butter and knead for 10 minutes more.
  3.  Roll the dough into a ball and set aside for 2 hours.
  4.  Cut the dough into 12 portions, roll each one and place into a bundt cake pan. Set aside for 40 minutes.
  5.  Brush with egg wash and bake at 180C/350F for 25 minutes.
