Crown shaped brioche: how to make it high and fluffy!

The result will leave you speechless!
INGREDIENTS
550g (4 ⅜ cup) bread flour;
7g (1 1/2 tsp) dry yeast;
30g (2 tbsp) sugar;
310ml (1 ⅓ cup) milk;
100g (½ cup) condensed milk;
1 egg;
70g (⅓ cup) butter, soft;
Egg wash.
METHOD
- Whisk flour with a pinch of salt and make a well in the center.
- Pour warm milk into it, add sugar, yeast, condensed milk and an egg. Knead the dough for 10 minutes, then add soft butter and knead for 10 minutes more.
- Roll the dough into a ball and set aside for 2 hours.
- Cut the dough into 12 portions, roll each one and place into a bundt cake pan. Set aside for 40 minutes.
- Brush with egg wash and bake at 180C/350F for 25 minutes.
