Fluffy cheese brioche: how to make it moist and delicious!

You only need a few steps to make an incredible savory brioche:

1 egg, separated;
1 package (7 g) yeast;
1 tsp salt;
30g (2 tbsp) sugar;
400ml (1 ¾ cup) milk;
80ml (⅓ cup) vegetable oil;
560g (4 ½ cup) flour;
200g (1 cup) feta cheese;
100 g (½ cup) sharp cheese, shredded;
½ cup chopped greens (parsley, dill, scallions).
Sesame and poppy seeds
METHOD
- Whisk egg whites with warm milk, sugar, salt, yeast and vegetable oil.
- Make a well in the middle of a bowl of flour. Pour liquids into it and mix to combine. Knead for a smooth dough (around 10 minutes), then place it into an oiled bowl, cover with plastic and set aside for 1 hour.
- Mix cheeses with greens.
- Cut the dough into 8 parts and roll each one into a circle.
- Place a heaping tablespoon of cheese filling in the middle of the dough, pinch edges together to form a triangle.
- Place triangles seam side down into a round baking pan and set aside to rise for 1 more hour.
- Brush brioche with leftover egg yolk. You can optionally decorate it with poppy seeds and sesame seeds.
- Bake for 190C/375F for 40-45 minutes.
