How to make the most fluffy brioche in the world
published on 7 January, 2024 at 11:48
INGREDIENTS
260ml (1 cup) of milk
100g (1/2 cup) of butter (melted)
120g (1/2 cup) of sugar
7g of dry yeast
1 egg
600g (4 3/4 cups) of flour
Condensed milk
METHOD
1. In a bowl add the milk, butter (melted), sugar, yeast, and egg and mix to combine. Gradually add the flour and mix with a spatula. When the dough starts to form knead it with hands to obtain smooth dough. Cover with cling film and let it rise for 2 hours, or until is double in volume.
2. After time has elapsed transfer the dough to the working surface and cut it into 12 pieces.
3. Flatten each piece to form a disc shape and transfer to the baking pan. Cover with a cloth and let it rise for 1 hour.
4. After 45 minutes, when the bread has risen, transfer it to the oven. Bake at 180°C/360°F for 45 minutes.
5. Transfer the brioche bread to the serving plate and brush with the condensed milk.
