Triple chocolate brioche: moist and fluffy, perfect for breakfast!

Kick start your morning with these deliciously easy chocolate brioches!
INGREDIENTS

1 package powdered yeast;
550 g (19.5 oz) flour;
1 cup warm milk;
150 g (5 oz) sugar;
50 g (1.7 oz) butter, melted;
1 egg;
a pinch of salt;
4 tbsp cocoa powder;
3 tbsp cream.
METHOD
- Add a pinch of sugar and powdered yeast into warm milk, whisk and set aside for 10 minutes to activate.
- Add egg, melted butter, some salt, leftover sugar and whisk until no more sugar crystals left. Mix in flour and kneed nice and smooth dough. Wrap in plastic and set aside for 1 hour.
- Cut the dough into thirds. Add 3 tbsp of cocoa and 2 tbsp of cream into one third, add leftover cocoa and cream into another third and set all three pieces aside, covered, for 1 hour.
- Cut white dough into 5 pieces, and both crown pieces into 4. For each piece into a ball and then roll into thin oval. Stack them up, alternating between white, dark brown and light brown.
- Roll out slightly to gather all the pieces and cut into 6.
- Roll out each log of striped dough, then make into a rope, twist and connect both ends to form a bagel.
- Set aside for 15 minutes and then bake 175C/350F for 20-25 minutes. Brush with butter and serve.
