Fluffy brioches: the must-have trick to make them perfect!

The secret to make fluffy brioches at home!
INGREDIENTS
300 g (2 cups) all-purpose flour;
180ml (¾ cup) milk;
25 g (2 tbsp) sugar;
3 g (½ tsp) salt;
7g dry yeast;
30g (2 tbsp) soft butter.

METHOD
- Whisk yeast and sugar into the milk and set aside to foam up.
- Pour milk into the flour mixed with some salt.
- Knead the dough until smooth, then work in some butter and form into a ball.
- Set the ball aside for 1 hour or until it doubles in size.
- Cut the dough into 6 pieces, roll each into a ball and set aside for 20 minutes.
- Cut each ball into 3 pieces, roll each and place 3 balls in 1 muffin tin.
- Set aside for 20 minutes, then brush with milk and bake at 180C/350F for 15 minutes.
