Fluffy brioches: the must-have trick to make them perfect!

The secret to make fluffy brioches at home! 

INGREDIENTS
300 g (2 cups) all-purpose flour;
180ml (¾ cup) milk;
25 g (2 tbsp) sugar;
3 g (½ tsp) salt;
7g dry yeast;
30g (2 tbsp) soft butter.
METHOD
  1. Whisk yeast and sugar into the milk and set aside to foam up.
  2. Pour milk into the flour mixed with some salt.
  3. Knead the dough until smooth, then work in some butter and form into a ball.
  4. Set the ball aside for 1 hour or until it doubles in size.
  5. Cut the dough into 6 pieces, roll each into a ball and set aside for 20 minutes.
  6. Cut each ball into 3 pieces, roll each and place 3 balls in 1 muffin tin.
  7. Set aside for 20 minutes, then brush with milk and bake at 180C/350F for 15 minutes.
