Fluffy brioche with almonds: fluffy and delicious!

Fluffy and so yummy, it's perfect for a tasty snack time!
INGREDIENTS

1 egg
100 g (1/2 cup) sugar
pinch of salt
100g (7 tbsp) sour cream
9g (3 tsp) instant yeast
50 ml (3 tbsp+1tsp) sunflower oil
100 ml (3.4 oz) lemonade
500 g (3 cups + 2 tbsp) flour
14-16 pieces marmelade
1 egg yolk
Almond flakes
METHOD
- In a medium bowl combine egg, sugar, and a pinch of salt and stir to combine. Add sour cream and stir until sugar dissolves. Stir in sunflower oil, add yeast and lemonade. Stir to combine.
- To a large bowl add sifted flour, then add yeast mixture and start to mix the dough with a spatula. Then continue to knead it with your hands until you receive an elastic dough.
- Form a ball from the dough and cover the bowl with a kitchen cloth or plastic wrap, Allow the dough to rise for 2 hours in a warm place.
Transfer the dough to the working surface, and divide it into 14-16 parts. - Roll each part into a ball, cover with a kitchen cloth, and let sit for 15 minutes.
- Form a long shape piece from each ball, fold it in half, make a spiral shape and seal the edges together to form a “ring”. Insert a piece of marmalade inside the ring. Continue with the rest of the dough.
- Arrange brioches into a greased bread or loaf pan, cover with a kitchen cloth and let rise for 20 minutes.
- Brush with egg yolk and sprinkle with almond flakes.
- Bake in the preheated to 180C/160F oven for 25 minutes. Slice and enjoy!
