Triangle brioches: fluffy and delicious!

INGREDIENTS

30g (1 ½ tbsp) sugar;
14g (1 ½ tbsp) fresh yeast;
70g (⅓ cup) warm water;
50g (⅓ cup) all-purpose flour;
60ml (¼ cup) vegetable oil;
70ml (⅓ cup) milk;
30g (1 ½ tbsp) sugar;
200g (1 ¼ cup) all-purpose flour;
¼ tsp vanilla powder;
a pinch of salt;
Almond flakes, honey, powdered sugar;
Vanilla custard, hazelnut paste.
METHOD
- Whisk sugar, warm water, 50 g of flour and crumbled yeast together until smooth.
- Set the mixture aside for 15 minutes.
- Add 200 g of flour, oil, leftover sugar, flour, vanilla and salt into the yeast base and knead until smooth dough forms (around 10 minutes). Cover and set aside for 1 hour.
- Cut the dough into 8 parts, roll each into a ball, then roll out into a disk.
- Using a pizza cutter make slits on one half of the circle and fold it in half. Place portions of hazelnut paste and custard on top of the uncut side.
- Fold each pun as shown on the video, pinch edges.
- Set buns aside for 30 minutes, then brush with egg wash and bake for 15 minutes at 190C/375F.
- Decorate using honey and almonds or simply dusting with powdered sugar.
