Crown brioche: here's how to make it soft and appetizing!

INGREDIENTS
For the dough:
200g (1 ½ cup) flour
10g (2 tsp) dry yeast
Pinch of salt
80ml (1/3 cup) milk
1 egg
10g (1 tbsp) sugar
For the filling:
120g (½ cup) cream cheese
15g (2 tbsp) powdered sugar
For the smearing:
10ml (1 tbsp) milk
Butter
Sliced almonds
METHOD
- Mix warm milk and yeast in a small bowl. In a mixing bowl, pour flour, egg, previously obtained mixture, sugar, and salt. Knead the dough and let it rest for 30 minutes.
- Roll out the dough with a rolling pin.
- Spread with cream cheese and sprinkle with powdered sugar.
- Roll the dough and shape it like a doughnut. Cut the dough with scissors and make a brooch. Leave to rest for 60 minutes.
- Brush with milk and bake at 360°F/180°C for 15 minutes.
- Spread with melted butter and sprinkle with almond flakes. Serve.
