Cloud brioche: how to make it soft and fragrant!

Here're all the secrets to make a fluffy sweet bread at home:
INGREDIENTS

250ml (1 cup) of room temperature water
1 room temperature egg
40g (2 1/2 tbsp) sugar
6g (1 tsp) salt
7g Instant Dry yeast
350g (2 3/4 cups) bread flour
45g (3 tbsp) melted butter
Milk for coating
METHOD
- Pour the room temperature water into a deeper bowl, add the egg, instant dry yeast, and mix everything. Pour the mixture into flour and salt, then knead everything. Add the melted butter and combine the gas with the dough. Cover the dough and let it stand for 20 minutes at room temperature.
- After 20 minutes, mix the dough by stretching the gap a little, in about 10 strokes, then cover the dough and let it stand for another 20 minutes.
- Then stretch the dough again, make about 10 strokes and cover the dough again and let it stand this time for 30 minutes.
- Divide the dough into 4 parts, flour the work surface, then roll each part of the dough into a fine ball, cover the balls with a kitchen cloth and let them stand for 15 minutes.
- Unroll and wrap each ball, then place in a 30 x 10 baking tin pre-coated with butter. Leave to stand for 40 minutes.
- Coat the surface of the bread with milk and bake at 160°C (320°F) in a preheated oven for 30 minutes.
