Zucchini fritters: the easy recipe to bake or fry them

Ingredients:
3 zucchini
1 potato
2 eggs
200 gr ricotta
70 gr breadcrumbs
60 gr grated cheese
Salt and pepper
1 pinch of paprika
Fry oil
Breadcrumbs for breading
 
Directions:
Grate both the courgettes and the potato and put them to rest for an hour by pressing with a bottle.
Then squeeze well and put in a bowl, add ricotta, breadcrumbs, grated cheese, salt, pepper, paprika and form the pancakes. Then pass them in breadcrumbs and fry or bake at 356°F (180°) for 20 minutes.
