Quick Zucchini Fritters: Add the spices to make them extra flavorful

INGREDIENTS
400g of zucchini
1 tsp salt
2 eggs
75g (1/3 cup) of grated Parmesan cheese
1/4 tsp ground black pepper
1/4 tsp curry
100g (1/2 cup) semolina
100g Mozzarella cubes
Oil
 
METHOD
  1. Grate zucchini, then mix it with salt and strain it.
  2. In another bowl mix the eggs with spices, cheese, zucchini and semolina.
  3. Transfer a spoon of mixture to the pan with oil, add mozzarella cubes and cover with one more spoon of the mixture, fry from both sides until golden brown.
