Ricotta and zucchini fritters: they are easy to make and delicious!

INGREDIENTS
1 zucchini
260g (1 cup) of ricotta
2 eggs
40g (1/2 cup) of parmesan
Salt
12g (3/4 tbsp) of baking powder
90g (3/4 cup) of flour
Extra virgin olive oil

METHOD
1. Grate the zucchini and squeeze well to remove excess water.
2. In a mixing bowl add the ricotta, eggs, parmesan, salt, and baking powder and start mixing with the electric mixer. Add the flour and grated zucchini and incorporate all.
3. Take the batter with the spoon and transfer it to the pan with olive oil. Cook them on each side 3-4 minutes until they are golden brown on both sides.
4. Serve them all together on the serving dish and enjoy.
