Zucchini buns: quick, easy and delicious!

If you love zucchini, this recipe is perfect for you! 

INGREDIENTS
1 Zucchini
1 Egg
100ml (2/5 cup) Milk
50ml (1/5 cup) Oil
100g (2/5 cup) Ricotta
150g (1 1/3 cup) Corn flour
200g (1 1/3 cup) Plain flour
10g (3 tsp) Baking powder
100g (2/5 cup) Mozzarella
Salt to taste
Sesame
 
METHOD
  1. Grate the zucchini. In a large bowl put egg, milk, oil and whisk it. Add grated zucchini, ricotta, cornflour, flour, salt and baking powder. Mix it all well and make balls.
  2. In each ball put one piece of mozzarella. Sprinkle balls with sesame and bake at 200C for 20 minutes.
