Zucchini and ricotta balls: follow these few, simple steps to make them creamy and tasty!

These grated zucchini and ricotta cheese balls are the creamiest you’ll ever try. They are delicious either oven baked or pan fried!
INGREDIENTS
2 medium-sized zucchini
60g Parmesan cheese
1 egg
salt
30g ricotta cheese
herbs
bread, crumb only
40g breadcrumbs
mini mozzarellas, as needed

DIRECTIONS
1. Grate the zucchini and combine them with the Parmesan cheese, egg, salt and ricotta.
2. Add the herbs and the bread. If the mixture is not thick enough, add some breadcrumbs.
3. Place a mini mozzarella in the center of each ball. Cover them with breadcrumbs.
4. Fry them in hot oil, or bake them at 180°C for 15 minutes.
