ZUCCHINI AND RICOTTA MEATBALLS: few ingredients but really delicious! π

INGREDIENTS
850g of zucchini
60g (1/4 cup) of ricotta
110g (1 1/4 cups) of parmesan
Thyme
1 egg
40g (1/4 cup) of breadcrumbs
Pepper
Salt
Β
Flour
Oil for frying
METHOD
1. Wash the zucchini and remove the ends. Grate them with a medium-hole grater. Place them in a colander placed over a bowl to remove the excess water. Transfer to the bowl.
2. In a bowl with the zucchini add the ricotta, parmesan, thyme, egg, breadcrumbs, salt, and pepper and mix to combine.
3. Take the mixture with your hands, form the meatballs (around 20 grams), and coat each with the flour.
4. Transfer the meatballs to the pan with hot oil and fry them until they are golden brown.
5. Serve them all together on a serving dish and enjoy.
