Zucchini burgers: the really delicious vegetarian version!

INGREDIENTS
2 zucchini
Salt
Olive oil
1 onion
Pepper
4 slices of bread
Dry herbs
Parsley
2 eggs
100g (1/2 cup) of parmesan cheese
40g (5 tbsp) of breadcrumbs
100g of cheese
Parmesan cheese

METHOD
  1. Grate the zucchini and transfer them to the bowl. Season with salt and remove the excess water.
  2. Pour the olive oil into the pan and add the onion. Fry the onion until soft and add the prepared zucchini. Season with pepper, fry them for a while, and remove from the heat.
  3. Cut the bread slices into small cubes and pour them into the bowl. Add the dry herbs, parsley, and prepared zucchini and mix.
  4. In the mixture add the eggs, parmesan cheese, and breadcrumbs and mix until all is well combined.
  5. Pour the olive oil on the baking tray covered with parchment paper. Divide mixture into the 4 equal parts.
  6. Add the half mixture for the first burger into the burger mold and press it well with the teaspoon. Add the cheese on top and close with another half.
  7. Press it well on top to make it compact and remove the mold to obtain the burger. Repeat the process for the rest of the burgers.
  8. Brush the burgers with oil and sprinkle with parmesan cheese on top. Transfer to the oven and bake at 180°C/360°F for 30 minutes.
