Zucchini burgers: the really delicious vegetarian version!

INGREDIENTS
2 zucchini
Salt
Olive oil
1 onion
Pepper
4 slices of bread
Dry herbs
Parsley
2 eggs
100g (1/2 cup) of parmesan cheese
40g (5 tbsp) of breadcrumbs

METHOD

METHOD
- Grate the zucchini and transfer them to the bowl. Season with salt and remove the excess water.
- Pour the olive oil into the pan and add the onion. Fry the onion until soft and add the prepared zucchini. Season with pepper, fry them for a while, and remove from the heat.
- Cut the bread slices into small cubes and pour them into the bowl. Add the dry herbs, parsley, and prepared zucchini and mix.
- In the mixture add the eggs, parmesan cheese, and breadcrumbs and mix until all is well combined.
- Pour the olive oil on the baking tray covered with parchment paper. Divide mixture into the 4 equal parts.
- Add the half mixture for the first burger into the burger mold and press it well with the teaspoon. Add the cheese on top and close with another half.
- Press it well on top to make it compact and remove the mold to obtain the burger. Repeat the process for the rest of the burgers.
- Brush the burgers with oil and sprinkle with parmesan cheese on top. Transfer to the oven and bake at 180°C/360°F for 30 minutes.
