Zucchini burgers: an alternative way to cook zucchini!

Easy and quick to make!

Ingredients:
⦁ 3 medium zucchinis;
⦁ 1 egg;
⦁ 30 g (1/3 cup) parmesan;
⦁ 50 g (1 cup) breadcrumbs;
⦁ 4 slices ciabatta, sliced into cubes;
⦁ 1 cup milk;
⦁ 1 garlic clove;
⦁ 1/4 cup sliced scallions;
⦁  vegetable oil for frying.
 
Instructions
 
1. Grate zucchinis on a small grater and squeeze as much excess moisture as possible.
 
2. Pour some milk on ciabatta slices and set aside for 5 minutes. Squeeze any excess milk.
 
3. Combine zucchinis with bread, breadcrumbs, minced garlic, egg parmesan and scallions. Season with salt and pepper.
 
4. Form some zucchini burgers using pastry ring. Add some breadcrumbs on the bottom, cover with zucchini mixture and top with ore breadcrumbs.
 
5. Fry burgers for 5-6 minutes, flipping halfway through.
