Zucchini washers: an easy way to prepare zucchini!

INGREDIENTS:
2 zucchini
2 tbsp of olive oil
Juice from 1/2 lemon
1 tsp dried basil
1 tsp dried oregano
1 tsp paprika powder
Salt and Pepper to taste
1/4 cup (30 grams) mozzarella, shredded

METHOD
1. Preheat the oven to 350 ° F / 175 ° C.
2. Place the zucchini between 2 wooden spoons. Start cutting them, but not all the way down. Do it only until you reach the spoon.
3. Drizzle 1 tbsp of olive oil over them. Bake them for the next 10 minutes.
4. In small bawl make the spicy glaze by mixing the remaining olive oil, the juice from half the lemon, basil, oregano, paprika powder, salt, and pepper.
5. Now use grated mozzarella to fill the zucchini. Spread on them the spicy mixture.
6. Bake them in the oven for the next 20 minutes.
