Brioche croissants: the recipe to make them fluffy and delicious

Ingredients:
500 gr of Manitoba flour
50 gr of sugar
50 gr of lard
5 gr of salt
270 gr of warm milk
1 egg
1 flask of orange essence or the equivalent of the grated peel of an orange
20 gr of brewer's yeast
Custard or chocolate for filling
 
Directions:
Dissolve the yeast in the milk, then add the flour and sugar. Mix everything together. Add the orange essence and the egg. Finally add the salt and lard. Transfer the dough to the work surface and make the creases, let it rise for 90 minutes in the oven turned off with the light on.
Then roll out the dough, form the triangles and then the croissants.
Brush the milk and let rise until doubled.
Bake at 356°F (180°) for 15/20 minutes.
